Jellies

So, what is a jelly?

Jelly is made by cooking fruit in water until soft then it is strained to separate the fruit solids from the juice overnight. The next morning Trisha adds sugar to the juice and reboils it.

How should you eat it?

Traditionally Rowanberry Jelly is eaten with venison but is also good with lamb or chicken. the rowanberries are picked in the local area. Redcurrant Jelly is also traditionally eaten with meat. The Plum and Cardamon Jelly has a pepper taste to it. So can be used for sweet or savory.

I am reliably told it is good in cocktails! Bramble Jelly is lovely on a freshly made pancake or scone!
